Apparently all of her work for Episode VIII was already done. She was going to be in Episode IX as well.

I wanted to link to a couple of recent interviews she did, but I'm having the worst time with technical glitches. So I'm just going to tell you where to look:
--With Stephen Colbert on "The Late Show", 11/21/16. If you go to YouTube and search on "carrie fisher colbert late show 2016", it's (currently) right at the top of the page. They discussed her recent memoir, Harrison Ford, etc. She had her (strange, to me) French bulldog, with her, kind of fancied up. To me, it looked like he had some kind of box tied to his back. I wondered, at the time, if it held some kind of emergency medical supplies, and if the dog was a service dog. AIUI, she got him as a rescue animal, but found that he worked well as a comfort animal. Anyway, really good interview.
--With Terri Gross on NPR's "Fresh Air". If you go to NPR.org and look up the "Fresh Air" program, then "carrie fisher", you should find that and previous interviews.

Gary is a comfort dog. I believe he was conscripted to help Ms. Fisher calm down during panic attacks and other neurological episodes. I also think he has a traumatic past of his own, because his own quirk is that he can't retract his tongue. Knowing Fisher, this probably sealed his fate as her BFF.
Of course Carrie's fan base went mad over him, and she made him a Twitter account in which he delivered droll little observations about his mistress. (I admit it, I follow).
The account is currently posting sad goodbye tweets. My guess is friends or publicists were allowed to post to the account, and they were doing the best they could with the situation.
